It's Cold .....

   What to have for lunch on a cold day?? Well something hot and hardy. I made corn muffins and bean stew. I call it stew, because I use three type of beans, potatoes and carrots.
  When ever I make any kind of soup beans I will make corn muffins. I will save some of the muffins for having with chili .  I had to use the big pot for the ham bone and decided to not dirty another pan . Hey less dish washing for me. Once I picked the ham off the boiled bone, I saved the bones for Sam the dog (Emma's ) Then I boiled some diced potatoes , onions, and carrots. Then I add a can of pinto, red , and navy beans.  Do not forget to add some Mrs. Dash seasonings. You do not need salt.  Ted loves this stew. I'll just make a small salad to go along with it.

  1. Yum! I love soups and this one sounds really good. I also love corn muffins. Alot of times we will have vegetable soup with cornbread instead of crackers. Thanks for sharing the recipe.

    1. Hi Kelly, I had that nice ham bone in the freezer from Christmas...so I used it for flavoring. But some times I will use smoked sausage as the meat. I like corn muffins with chili and veggie soup too. :) Blessings to you and yours, xoxo,Susie

  2. I used my big pot for doing the same thing...EXCEPT I saved the bone from the spiral ham....and used it to put in beef stock and chicken stock and made a yummmmmy pot of vegetable soup.
    Then, I tossed the ham bone.
    I always use my hambone for soup.
    We had plenty to eat for supper...and I froze a couple of containers to enjoy later.
    Love muffins with my soup, too.

    1. Hi Jackie, I love corn muffins with chili. I never thought of using the ham bone for stock. I will have to try that. I did have this ham bone in the freezer from Christmas dinner...I gave all the daughters the left over ham. LOL. Blessings to you, xoxo,Susie

    1. Thank you Jo. The sun did come out and it was cold enough you could barely tell. A soup day indeed. My husband was truly enjoying his lunch. Good thing as we had to fill the wood box at the back door. takes about 5 wheel barrow loads. Plus filling the bird feeders. I also threw out lots of old bread for them. Blessings, xoxo,Susie

    1. Hi BJ, Ted did enjoy his lunch. We have had chores today. Like load the wood box at the back door. Bring in a load for the box by the fireplace. Filling bird feeders and doing laundry.   7. we have been freezing the last couple of days, and I have been wanting to cook a big pot of beans with the ham bone. Soups are such a hit during cold winter days

    1. Hi Daniela, It's very cold today, but I'm thankful the wind isn't blowing like on Sunday. I think everyone was smart and saved the ham bones from their Christmas hams.     Soup looks yummy and I'm kinda chuckling because I'm sitting here freezing...its 45 degrees here today in the deep south and THAT IS COLD FOR US!!! then I see pics of your snow and realize I better keep my trap shut! hahaha...we do have bright sunshine today tho....thinking of what to cook tonight while we watch college football championships...we are LSU all the way. We didn't make it to finals but we have to support our SEC!!!!

  9. I made Albondigas-Mexican meatball soup. It's easy and not spicy. Best with tortillas, lime and avocado.

  10. I'd eat your bean stew, but hubby wouldn't. So glad to hear you say that you use Mrs Dash and no salt. I am watching my sodium and always trying new salt free seasonings. It's cold here too, I think it's cold everywhere....at least all the blogs I've read say they're cold.

    1. I rarely use salt or very little. There's too much sodium in our foods before it's even cooked. I am not a big fan of beans(Too many in childhood) so I have to mix the potatoes, carrots and onions into them. I think winter is here now. Blessings, xoxo,Susie

  13. Happy Monday! We made turkey soup yesterday-usually we have enough for two nights, but it was thicker than normal and only enough for one night. Tonight we made spaghetti. We will have enough for tomorrow night. Often if it is really cold, I will have lentil soup for lunch(not homemade though), we love beans and ham. I also have a really good chili recipe that I'll have to make soon. I could make corn muffins, but we just put corn chips and cheese on top. Glad I just finished dinner or I'd be hungry.   14. Yummy! That sounds so good to me right now, Susie. It's been cold here too. And what better way to warm up than with a warm bowl of stew and cornbread. Do you know that cornbread and chili is one of my favorites? That will be nice to have later after the stew is gone. I really like that red pot. It seems that food cooks better with pots like that. What a wonderful meal this is.

  16. Sounds yummy, Susie! I love making big pots of soup and chili in the winter time. Tonight I made chicken and veggie soup for dinner. I had it simmering for hours and it was so yum! Keep warm:)

  19. Hi Susie! I wanted to pop on over and read here at your blog! Thank you for the recent Visit to Corn in my coffee pot. I see from your blog roll we read some of the same ol blogs... We call that "traveling in the same circles", and I guess we have just never made acquaintances!

    I've read several of your post! The snow is lovely, so glad it's there with you, and not here. Though, w have had some cold temps the past few days-- but nothing white.
    You have a beautiful GROWING family... So do we! We're expecting our 20th LITTLE. End of January first of February.

    You'll be seeing more of me here.
    Oh and kudos on the corn Muffins-- I make a corn cake and cute it into squares.. We like ours sweet. Today we had it with potato soup with ham in it! Delicious on a cold day!

    1. I came from a big family...but never wanted one myself.LOL....I have 4 of the sweetest daughters and now they have families. I truly love each and every one of them.   24. Sounds good on a cold day like this. I made veggie soup with a can of northern beans in it this time. Its good, had it for lunch. Less dishes works for me, too. I love doing it all in one pot...ya get smarter the older you get!
